Hand-picked in spring, the leaves are steamed, pounded, pressed into coin shapes, and naturally aged for at least 6 months (sometimes over 20 years) developing a deep, earthy, slightly sweet flavor that evolves with every brew. You can also boil it for hours. Originally used for both drinking and trade, Doncha today, it’s a rare artisanal tea, still made in small batches and valued for both its history and its unique fermentation process.
